Fried Potatoes and Onions

Onions, bell peppers, and garlic add great flavor to these skillet-fried potatoes. Quick and easy, home fries are an ideal side dish to serve with a hearty breakfast or brunch. They’re an excellent dinner side as well.

 

Ingredients

1 lb. Gold potatoes sliced into bite sized pieces
½ Onion chopped into large pieces
Peanut oil
2 Tbsp. Butter
Salt and pepper to taste
Paprika and basil for garnish

 

 

Instructions

Heat a layer of peanut oil and the butter in a skillet over medium-high heat.
Add the chopped potatoes and onion to the heated skillet, and saute until the potatoes and onions are browned and crispy. Stir often to avoid burning parts of them.
Add salt and pepper to taste, drain and excess oil and garnish with paprika and basil prior to serving.
