Carrot Cake Cookies With Cream Cheese Frosting!!

Simple and easy ! My whole family loves this recipe so much. If it were for them, I’d be making this every day! Give it a shot, you’ll love it!To Make this Recipe You’ Will Need the following ingredients:

 

 

Ingredients

+Carrot cookies
°125 ml (1/2 cup) unsalted butter, slightly softened
°125 ml (1/2 cup) brown sugar
°125 ml (1/2 cup) granulated sugar
°1 large egg
°5 ml vanilla extract
°250 ml + 35 ml (1 cup plus 3 tbsp) all-purpose flour
°2.5 ml (1/2 tsp) baking soda
°2.5 ml baking powder
°3.75 ml ground cinnamon
°1.25 ml (1/4 tsp) salt
°125 ml (1/2 cup) old fashioned rolled oats
°125 ml (1/2 cup) grated coconut, unsweetened
°167 ml (2/3 cup) carrots, finely grated
°84 ml (1/3 cup) finely chopped walnuts (optional)
+Cream cheese frosting
°118 ml (4 ounces) cream cheese, softened
°60 ml (4 tbsp.) unsalted butter, softened
°375 ml (1 1/2 cups) icing sugar, plus more if needed
°1.25 ml (1/4 tsp) pure vanilla extract

 

 

Methods :

Carrot cookies
Preheat the oven to 178°C (350°F). Put the grill at the center of the oven.
Line 2 baking sheets with paper.
In a small bowl, beat the butter and both types of sugar for one to two minutes until creamy.
Add the egg and vanilla, then mix, scraping the bowl if necessary.
In other bowl, combine the flour, baking soda, baking powder, cinnamon & salt.
Add flour mixture to butter mixture and beat on low speed until well combined.
Add rolled oats, coconut, carrots and walnuts.
Mix until everything is well combined.
Place the dough in the fridge for 30 minutes.
Using a spoon, form 30 balls of dough, counting about 10 ml (2 teaspoons) of preparation per cookie.
Place on the plates, leaving a few centimeters between them. Don’t flatten them.
Bake 9 to 11 minutes, until golden brown and slightly soft in the centre.
Turn the plates halfway through the cooking time to ensure even cooking.
Leave to cool on the baking sheets.
Refrigerate cookies to firm them up while you prepare the frosting.
Cream cheese frosting
Beat cream cheese and butter for several minutes, until well blended.
Add icing sugar and vanilla.
Beat for a few minutes until smooth and creamy. If the icing seems too runny, add a little more icing sugar or refrigerate for 20 minutes to firm it up.
Spread the frosting on the bottom of 15 cookies. Close with the other 15 cookies to create sandwiches..
